Cinnamon is known as ‘Kayu Manis’ in Malay and ‘肉桂’ in Chinese is divided into two which are Cassia and Ceylon Cinnamon. Comparing with Ceylon Cinnamon, Cassia Cinnamon tends to be a dark brown-red color with thicker sticks and a rougher texture with higher sugar content. Roughly 95% of its oil is cinnamaldehyde, which gives cassia a very strong and spicy flavor.
